
I'm definitely one for an easy snack that I can feel good about. These delicious granola bars satisfy the sweet tooth while packing a protein punch! Made with no refined sugar and an easy no-back recipe, you can't go wrong with these yummy, homemade Chocolate Chip Granola Bars!
INGREDIENTS
2 cups quick oats
1 cup nuts (almonds, walnuts, cashews)
1 tsp. cinnamon
1/2 tsp. salt
2 tbsp coconut oil
3/4 cup natural peanut butter
1/2 cup organic honey
1 tsp. pure vanilla extract
1 tsp. pure almond extract
2/3 cup chocolate chips
INSTRUCTIONS
Step 1: Combine oats, nuts, cinnamon & salt in large
bowl. Stir to combine
Step 2: In a small saucepan combine coconut oil, honey, peanut butter, vanilla & almond extract. Warm till coconut oil has melted.
Step 3: Add wet ingredients to dry and stir to combine. Let mixture sit for 30 minutes before adding chocolate chips.
Step 4: Pour mixture onto lined baking sheet and press down firmly with spatula. Cover & refridgerate at least 2 hours.
Step 5: Cut into desired sizes.
Step 6: Keep them in the fridge or freezer. Enjoy!
