Total Time: 20 minutes Servings: 8 servings
- For the gyro meat:
1.5 lb chicken breast cut into strips
- 1 teaspoon kosher salt or to your taste
- 1/2 teaspoons ground black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1 teaspoon ground cumin
- 2 cloves garlic minced

- 2 tablespoons lemon juice
1 cup store bough or homemade tzatziki sauce
1 large red onion thinly sliced
2 beef tomatoes sliced
2 Persian cucumbers thinly sliced on the diagonal
8 pita bread

To make the grilled chicken:
Step 1: Place the chicken strips in a large bowl and sprinkle with the seasonings. Add minced garlic, olive oil, and lemon juice. Mix thoroughly to coat the chicken, then if time allows marinate it in the fridge for up to 1 hour.
Step 2: Preheat a grill pan over medium-high heat. Grease the grill with a bit of oil, then add chicken and cook until grill marks appear and cooked through, about 8-10 minutes in total.
To prepare the gyros:
While the chicken is cooking, prepare toppings.
Step 3: Thinly slice the onion, tomatoes, and cucumbers. Microwave the pita bread for about 1 minute. For assembling, load up the pita bread with a spoonful of tzatziki sauce.
Step 4: Add warm grilled chicken on top of the sauce. Add sliced onion, tomatoes, and cucumbers.
Step 5: Garnish with fresh dill and serve immediately.
