Red Super Bowl


I am always a fan of a meal that has a lot of variety within ingredients and minimum pans being used. This Red Super Bowl is incredibly delicious and PACKED with an incredible variety of healthy goodness! Your belly will thank you for this

nutritious, delicious bowl!


INGREDIENTS

  • 1 Cup Organic Quiona

  • 1 Organic, Grass Fed Sirloin Steak

  • 4 Carrots

  • 2 Red Beets + Leafs & Stems

  • 1 Leek

  • 1 Bok Choy

  • 4 Radish

  • Salt & Garlic to taste


INSTRUCTIONS

Step 1: Heat large pan with 2 tbsp. avocado oil over medium/high heat.


Step 2: Soak quiona in water


Step 3: Rinse and chop all produce. Set radishs aside


Step 4: Combine all other produce into heated pan and sauté for 15-20 minutes, season with garlic and salt to taste. Cook till veggies are al dente.


Step 5: Bring 2 cups water to boil in a small saucepan


Step 6: Remove quiona from soak and add to boiling water. Let boil for 2 minutes then remove to low heat and cover. about 12 minutes


Step 7: Dice steak into bite size pieces and cook on stovetop over medium/high heat for 3-5 minutes till cooked to liking


Step 8: Layer quiona, veggie mix and steak. Top off with diced radish


Step 9: Enjoy!
