Asian Goddess Bowl with Teriyaki Aioli


Sometimes life calls for something a little more special. This freaking delicious, bomb.com dinner is probably one of the best dinners I've ever made. There are a few more steps than my normal meals but it's still a very easy meal to make. Give this a try if you really want to impress and give your tastebuds a delicious kick in the mouth!



INGREDIENTS

  • 1 can chickpeas

  • whole grain rice

  • organic chicken thighs

  • 3 garlic cloves

  • 1 leek

  • 1 fennel

  • 6 mini bell peppers

  • 1 bok choy

  • 4 large kale leafs

  • 2 large radish

  • plain probiotic yogurt

  • lemon juice

  • soy sauce

  • teriyaki sauce

  • cayenne pepper

  • dill


INSTRUCTIONS

Step 1: Preheat oven to 400 degrees


Step 2: Rinse chickpeas. In a mixing bowl toss chickpeas in a little bit of avocado oil, garlic salt, cayenne pepper and dill.


Step 3: Cook chickpeas in the oven for 20 minutes.


Step 4: Heat large skillet on medium to medium/high heat with a little bit of cooking oil.


Step 5: Dice garlic cloves and add to pan along with chicken thighs. Add two tablespoons of water. Cover and let cook.


Step 6: Rinse and dice all remaining vegetables.


Step 7: Once chicken is mostly cooked. Remove from pan and dice thinly.


Step 8: Rinse and cook rice.


Step 9: Add diced vegetables to skillet. Add a little more water if needed to slightly steam. Let fry for 10 minutes. Add diced chicken back in. Remove chickpeas from oven.


Step 10: Add soy sauce and teriyaki sauce to taste. A little goes a long way.


Step 11: Teriyaki Aioli: Combine probiotic yogurt, lemon juice, cayenne, dill, teriyaki sauce to taste. Should be a slightly runny consistency.


Step 12: In a bowl, layer Rice, Chicken/Veggie mix, Roasted Chickpeas, Teriyaki Aioli. Top off with diced radish and dill


Step 13: Enjoy!
