Banana Cinnamon Muffins


You know I'm a sucker for delicious & EASY! These healthy little muffins are a One Bowl Recipe making them fast and easy to whip up! If you don't have muffin cups, easily pour batter into a bread pan and bake a yummy loaf!



INGREDIENTS

  • 3 ripe bananas, mashed

  • 2 large eggs

  • 1/2 cup maple syrup or honey

  • 1/2 cup milk alternative

  • 1 cup rolled oats

  • 1 1/2 cups flour

  • 1 tsp cinnamon

  • 1/8 tsp all spice (optional)

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • chocolate chips (optional)


INSTRUCTIONS

Step 1: Preheat oven to 450


Step 2: In a large mixing bowl combine mashed bananas, eggs, maple syrup, milk and oats.


Step 3: Let sit for 2-3 minutes


Step 4: Line muffin pan with muffin tins or grease pan.


Step 5: Reduce heat to 350


Step 6: Add to mixing bowl remaining ingredients, minus chocolate chips.


Step 7: Fill muffin tins or pan. Top with a few chocolate chips and dash of cinnamon.


Step 8: Bake for 15-20 minutes, until tops are slightly darker. Remove from oven and let cool for 10-12 minutes.


Step 9: Enjoy!
