You guys know I've been on a Chia kick lately. They are FILLED with potassium, antioxidants, fiber, calcium, omega-3, iron, protein & magnesium!! This Blue Kiwi Chia Bowl was so freaking good and it only took me about 12 minutes to make! Most of the time is waiting for the chia seeds to soak and do their magical thing.

INGREDIENTS
6 tablespoons chia seeds
1/2 cup milk alternative
handful fresh blueberries
1 sliced kiwi
coconut flakes to taste
1 tablespoon pure maple syrup
crushed walnuts to taste
dash of cinnamon
INSTRUCTIONS
Step 1: Combine chia seeds and milk alternative. Mix and place in fridge for 10-12 minutes
Step 2: Remove from fridge and stir chia seed pudding. Add a bit more milk if needed
Step 3: Assemble toppings
Step 4: Enjoy!
