Chickpea Chocolate Chip Cookies


Holy Shit you guys, these cookies are freaking bomb! I was expecting them to be good but I had no idea what goodness we were in for. I've been on a baking cook lately and being very creative with ingredients. So I thought I'd give these babies a try. They are so freaking easy, not messy to make and are so soft and gooey! Give these yummy cookies a try!



INGREDIENTS

  • 1 15oz can of chickpeas, drained and rinsed

  • 2/3 cup creamy peanut butter

  • 1/4 cup pure maple syrup

  • 1/2 tsp pure vanilla extract

  • 1 1/4 tsp baking soda

  • 1 pinch sea salt

  • 1/2 cup chocolate chips

INSTRUCTIONS


Step 1: Preheat oven to 350 degrees and line 2 baking sheets with parchment paper


Step 2: Combine all ingredients except chocolate chips into a food processor. Blend until thick consistency


Step 3: Fold in chocolate chips


Step 4: Form 12 disks onto cookie sheet


Step 5: Bake for 12 minutes


Step 6: Let cool for 5 minutes. Enjoy!
