Sweet Beef & Kale Bake with Aioli

I was more proud of this meal than any other meal I have ever made or created. This dinner was freaking delicious and super easy, just the way I like it! It's the perfect balance of sweet, savory, rich and light. If you like to eat scrumptious food, give this Sweet Beef & Kale Bake a try!


  • Sweet Potato

  • Organic Grass Fed Beef (or ground turkey)

  • Organic Kale

  • Avocado Oil

  • 2 tbs. Greek Yogurt

  • 1 tbs. Olive Oil Mayonnaise

  • Lemon Juice

  • Balsamic Vinegar

  • Cayenne Pepper


Step 1: Preheat oven to 425°

Step 2: Wash, scrub, dry and poke holes in sweet potato

Step 3: Cover sweet potato in avocado oil and salt. Bake in oven for 45-60 minutes.

Step 4: Cook organic grass fed beef over stovetop

Step 5: Chop kale and cook on stovetop with avocado oil

Step 6: Create ailoi by combining greek yogurt, mayonnaise, lemon juice & cayenne pepper

Step 7: Once sweet potato is cooked, remove it from oven, slice down the middle. Cover in ground beef, top off with sautéed kale.

Step 8: Drizzle aioli and balsamic vinegar on top.

Step 9: Enjoy!
